Colorado Springs, CO - With heavy hearts and profound gratitude for a life beautifully lived, we announce the peaceful passing of Elizabeth ('Mims' to her grandchildren) on August 13, 2025, at the age of 90. She departed surrounded by the love of her children, leaving behind a legacy of grace, wisdom, and unconditional love that will forever illuminate our lives.
Elizabeth was born to M.H. and Thelma Foster in Anson, Texas on February 6, 1935. She was the eldest child followed by her sister, Barbara Young of Longview, TX, who survives.
She met the boy who would become the love of her life, Jim Acker, when they were children in elementary school. They married in 1954 and together they shared 69 wonderful years of marriage filled with laughter, adventure, and deep devotion. Three children came from their union: Kimberlee, James Baron and Mark Blaine. Jim passed away in 2022.
Throughout her remarkable 90 years, Elizabeth most relished her role as mother, grandmother, great-grandmother and housewife, supporting Jim in his business at Corsicana Laundry and Dry Cleaners. She had a gift for cooking and entertaining and was well-known among her friends for her delicious dry martinis.
Grandson, Kyle Atchison, shared this remembrance:
"Our Mims left this world peacefully to be with our Poppy. I honestly don't know which one of them are more excited to see the other. They completely adored each other. Just like Poppy, Mims accepted me like her own grandson from the day I came into the family. They taught us the meaning of love and the power of the woman standing beside you."
"Mims was the greatest chef that never opened a restaurant, the fiercest woman that protected her family and friends, and the greatest soundboard that never judged. She loved everyone and everything. She cherished the outdoors and wildlife. She introduced Tricia and I to the mountain life, which she loved to the end. She was literally the coolest grandmother that anyone could ask for. She would sip on a Scotch with you and talk about life, family, and traveling (and jump on Poppy for trying to talk business during these conversations)."
The mountains were always dear to Elizabeth's heart, and she relished her many getaways to her mountain home in New Mexico, later in Colorado Springs. The quiet surroundings, the cool Rocky Mountain air, the glory of nature fed her soul. Her last days were spent joyfully in her Colorado casita gazing upon Pikes Peak and hand-feeding apples to the resident deer.
A celebration of Elizabeth's life will be held later in the year in Corsicana. As an addition, her simple pastime was marveling at God's handiwork in trees; in lieu of flowers, you may make a living tribute to Elizabeth by planting a tree in her name at https://alivingtribute.org
